Carbone

Greenwich Village, Manhattan

Carbone is one of NYC's most iconic Italian-American restaurants — a Greenwich Village institution famous for theatrical tableside service, celebrity sightings, and elevated red-sauce classics from Major Food Group.

Carbone, opened in 2013 by Mario Carbone, Rich Torrisi, and Jeff Zalaznick of Major Food Group, reimagined the classic mid-century Italian-American restaurant for a new generation of New Yorkers. Set inside a former Greenwich Village red-sauce joint called Rocco, the room was preserved and elevated: Sinatra on the speakers, captains in burgundy Zac Posen tuxedos, hand-painted murals, and tableside Caesars prepared with theatrical precision.

The menu is a love letter to the New York Italian-American canon — spicy rigatoni vodka, veal parmesan the size of a hubcap, Mario's meatballs, and a Caesar alla ZZ that has become one of the most photographed dishes in the city. Portions are generous, prices are high, and the experience is unapologetically a show.

More than a decade in, Carbone is still one of the hardest reservations in NYC. It launched a global brand (Miami, Hong Kong, Dallas, Riyadh, Las Vegas) and arguably redefined what a "scene" restaurant could be in modern New York. Celebrities, finance, fashion, and tourists who plan months ahead all share the same dining room — and somehow it works.
